Black Bean Chili
Black Bean Chili
Super tasty and "meaty" chili that is fun to make, filling, and certainly very unique.
Ingredients

- 1 large onion, diced
- 1 lb mushrooms
- 2.5 tbs olive oil
- 1 tsp cumin
- 2 tsp coriander
- 1 tsp yellow mustard seed (optional)
- 2 tbs dark red chili powder
- 2 chipotle chilis, minced
- 2 veggie stock cubes (Rapunzel...amazon)
- 5 cups purified water
- 1/2 c freeze dried red bell peppers
- 1/2 c freeze-dried green bell peppers
- 1 lb (2.5 c) dry black beans, rinsed
- 2 tbs plus 1 tsp kosher salt
- 2 15oz cans diced tomatoes & juice
Instructions
- In a large dutch oven with a tight-fitting lid add mushrooms, and 1 tsp salt, stir cook covered over medium-high heat 10 minutes, stir, cook 5 minutes more.
- Remove lid, stir until all liquid has evaporated then add oil and onions, cook 5 minutes. Add garlic.
- Add spiced and chilis, cook 2 minutes then add stock cubes, water, and bell peppers, and remaining salt.
- Add beans, stir well place in oven covered and cook one hour., add tomatoes, stir and cook another 1 hour 20 minutes.
