Refried Pinto Bean Soup

So simple but has great flavor and texture. Quickly have a meal on the table with refried bean flakes.

Ingredients

  • 2 cups chicken broth
  • 1-1/4 cups pinto bean flakes
  • 1/4 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon oregano
  • 1 teaspoon onion powder
  • 1 teaspoon lime juice (approx. 1/4 lime, squeezed)
  • 1/2 cup Rotel diced tomatoes with chili
  • 2 tablespoons thinned sour cream
  • Dash of hot sauce (I use Yucateco)

Instructions

  1. Put the broth, bean flakes, and dried seasonings in pot.
  2. Turn on heat to medium high and stir well. Bring to simmer and cook for 8-10 minutes, stirring occasionally.
  3. Turn off heat, and squeeze lime into beans, and mix.
  4. Put Rotel into middle of bowl, then pour soup over this.
  5. Garnish with sour cream, hot sauce, and tortilla chips.
