Spiced Red Lentil & Tomato Stew
Such an easy one-pot dish with hearty red lentils, tomato, and a few other simple ingredients with an Indian flair.
Ingredients
- 1 tsp dehydrated (or fresh) ginger, minced
- 1/4 cup freeze-dried red bell peppers
- 1/4 cup freeze-dried celery
- 1/4 1/2 cup freeze-dried onion flakes
- 1 tsp curry powder
- 1 tsp garam masala
- 1/4 tsp black pepper
- 2 tsp kosher salt
- 2.5 cups organic red lentils, rinsed
- 2 15 oz cans whole peeled tomatoes, blitzed up in Vitamix
- 8 cups veggie broth
Instructions
- Add all ingredients to a large pot, stir well, cover with a tight-fitting lid.
- Bring to boil, then lower heat and simmer covered 35-40 minutes.
- Adjust seasoning if needed with more salt or pepper.
