Thai Fried Rice w Chicken

Thai Fried rice is a simple dish that continues to excite me. Yeah I know it's just fried rice....but the 3 flavors; sweet, salty, and spicy always keep me coming back for more. Be sure to play around with my basic recipe..just be sure you can pick out each of the key flavors that make this dish so exciting.

Ingredients

  • coconut oil for frying
  • 5 large green onions, washed and chopped
  • 8 large garlic cloves
  • 1-inch piece of ginger, minced finely
  • 1 bell pepper, diced
  • 2 medium carrots, cut in half lengthwise, then sliced
  • 5 cups napa cabbage, sliced finely
  • 3 cups button mushrooms, sliced
  • 20 snow peas, sliced finely
  • 2 small cayenne of Thai Bird chilies, sliced
  • 3 boneless skinless chicken thighs, chopped into 1/2 inch chunks
  • 4 cups Jasmine rice, cooked and cooled
  • large handful fresh cilantro, chopped
  • juice of one large lime, plus more sliced for garnish
  • sliced cucumbers for garnish
  • sweet chili sauce and/or Sambal for garnish
  • Mung bean sprouts (optional)
  • fish sauce to taste
  • coconut palm sugar to taste (2 tbs should do it)
  • Tamari soy sauce to taste
  • white pepper, to taste
  • 3 eggs beaten

Instructions

  1. In a large dutch oven or wok over very high heat add coconut oil than the first 6 ingredients, cook tossing and stirring often for 5-7 minutes.
  2. Add cabbage, mushrooms, and chilies, continue cooking 5 more minutes, remove these items from the wok, and set aside....best to place them on a sheet tray...not in a pile.
  3. Return wok to heat, add more oil than the chicken, fry the chicken only stirring when you see it becoming nice and brown...should take 10 minutes of cooking.
  4. Add sugar, soy, and fish sauce, and stir for another 2 minutes....then add rice, cook for another 2 minutes.
  5. Return the vegetal components to the dish., stir to combine well. Add beaten, eggs, cilantro, lime juice, white pepper, more soy and fish sauce. Stir well to combine and make sure everything is nice and hot.
  6. Serve with garnish or more fresh cilantro, chili sauces, lime wedges, cold cucumber slices.
