Dried Potatoes: Cooking

Potato flakes offer great versatility in the kitchen, since you can easily fine-tune their final consistency by adjusting the amount of liquid, fat, and seasonings added. For instance, in my Salt Cod Potato Cakes recipe (and accompanying video), I add only a small amount of liquid relative to the potato flakes, in order to achieve the firm consistency of the cakes.

Dried potato flakes can be used to stretch all kinds of savory dishes, including ones made with fresh potatoes. They can also thicken up sauces, stews, and chili, while contributing a flavor of their own that blends well with the other elements of these meals. Other starchy thickeners, such as arrowroot and cornstarch, are, at best, flavor-neutral, but can also contribute an unwanted chalky taste.

Diced potatoes, with a firmer texture than flakes, make a hearty addition to stews, soups, and chili. They also sit well on a plate alongside eggs, or even a nice steak.

Dried Potatoes for Camping and Backpacking

Due to their light weight and just-add-water preparation, dried potatoes are an excellent ingredient for home-brewed camping and backpacking meals. You can make your own ready mix by combining dried potatoes with powdered milk, powdered sour cream, powdered butter, and freeze-dried herbs. At the campsite, you only need add boiling water and stir, for a hearty, high-carb meal.
