Potato Pancakes
Simple and delicious recipe for potato pancakes.
Ingredients
- 1/2 shallot, chopped
- 1 tablespoon extra virgin olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 cup plant milk (almond, cashew, soy, or rice milk)
- 1-cup potato flakes
- 1/2 teaspoon dry dill weed
- Pinch of cayenne pepper (optional)
Instructions
- Dice shallot, then cook for 2-3 minutes in olive oil in sauce pot over medium-high heat. Season with salt & pepper.
- Add plant milk and more salt & pepper. Add cayenne pepper if desired.
- Bring to boil and turn off heat. Add potato flakes in 1/4 cup batches while mixing continually.
- Add dill weed. Mix well. Divide mixture and form patties.
- Cook 12 minutes in pan over medium-low heat. Flip patties and cook other side for 4-5 more minutes, until golden brown.
- Serve warm with condiment of your choice - I like chipotle ketchup.
