Naked Quiche

This simple crustless quiche uses free-dried ingredients and states terrific.

Ingredients

  • 1/4 cup freeze-dried red bell pepper, warm water added to rehydrate
  • 1 tablespoon olive oil
  • 3 tablespoons butter
  • 1/4 cup onions, minced
  • 2 garlic cloves, minced
  • 20 twists black pepper
  • Pinch of kosher salt
  • 1/4 teaspoon Italian seasoning
  • 1/2 teaspoon tumeric
  • 2 cups chopped collards (or any greens)
  • 4 ounces sausage
  • 10 tablespoons Ova-Easy egg crystals mixed with 1-3/4 cups water
  • 3 tablespoons parmesan cheese
  • 1/2 cup milk
  • 2 ounces sharp cheddar cheese

Instructions

  1. Rehydrate bell peppers. Preheat oven to 350° (F).
  2. In a pan over medium-high heat, melt butter in olive oil.
  3. Add onions and garlic, and cook for about 5 minutes. Add salt, pepper, Italian seasoning, and turmeric. Mix well.
  4. Add chopped greens and cook for 5 minutes. Add sausage, break up with a spoon, and cook for 5 more minutes.
  5. Spread sausage and greens mixture, plus rehydrated peppers, evenly on bottom of the greased pie dish.
  6. In a large bowl whisk Ova-Easy egg crystals with water. Add parmesan cheese and milk and whisk well.
  7. Sprinkle sharp cheddar over the mixture and pour eggs in over the top of everything else..
  8. Bake in an oven preheated to 350° (F) oven for 30 minutes or until eggs set.
  9. Slice in wedges.
