Naked Quiche

Naked Quiche
This simple crustless quiche uses free-dried ingredients and states terrific.
Ingredients
- 1/4 cup freeze-dried red bell pepper, warm water added to rehydrate
- 1 tablespoon olive oil
- 3 tablespoons butter
- 1/4 cup onions, minced
- 2 garlic cloves, minced
- 20 twists black pepper
- Pinch of kosher salt
- 1/4 teaspoon Italian seasoning
- 1/2 teaspoon tumeric
- 2 cups chopped collards (or any greens)
- 4 ounces sausage
- 10 tablespoons Ova-Easy egg crystals mixed with 1-3/4 cups water
- 3 tablespoons parmesan cheese
- 1/2 cup milk
- 2 ounces sharp cheddar cheese
Instructions
- Rehydrate bell peppers. Preheat oven to 350° (F).
- In a pan over medium-high heat, melt butter in olive oil.
- Add onions and garlic, and cook for about 5 minutes. Add salt, pepper, Italian seasoning, and turmeric. Mix well.
- Add chopped greens and cook for 5 minutes. Add sausage, break up with a spoon, and cook for 5 more minutes.
- Spread sausage and greens mixture, plus rehydrated peppers, evenly on bottom of the greased pie dish.
- In a large bowl whisk Ova-Easy egg crystals with water. Add parmesan cheese and milk and whisk well.
- Sprinkle sharp cheddar over the mixture and pour eggs in over the top of everything else..
- Bake in an oven preheated to 350° (F) oven for 30 minutes or until eggs set.
- Slice in wedges.
