Rustic French Loaf

Simple bread to make that has a wonderful taste and texture.

Ingredients

  • 2 tsp active dry yeast
  • 12 oz warm water
  • 13 oz bread flour
  • 4 oz whole wheat flour
  • 2 tsp kosher salt

Instructions

  1. In large bowl of a stand mixer fitted with dough hook add water and yeast, mix well, then add flours, mix for 2 minutes, add salt, continue mixing.
  2. Let mixer run until dough is smooth and elastic and sides of bowl begin to become clean.
  3. Allow dough to ferment as per video, at least 12 hours but as many as 24.
  4. Deflate dough at least 2 times during this process, I would shoot for at least a 12 hour ferment, deflating at 5 hours, then at 9 hours.
  5. Shape douhg as per video, bake and enjoy.
