Rustic French Loaf
Simple bread to make that has a wonderful taste and texture.
Ingredients
- 2 tsp active dry yeast
- 12 oz warm water
- 13 oz bread flour
- 4 oz whole wheat flour
- 2 tsp kosher salt
Instructions
- In large bowl of a stand mixer fitted with dough hook add water and yeast, mix well, then add flours, mix for 2 minutes, add salt, continue mixing.
- Let mixer run until dough is smooth and elastic and sides of bowl begin to become clean.
- Allow dough to ferment as per video, at least 12 hours but as many as 24.
- Deflate dough at least 2 times during this process, I would shoot for at least a 12 hour ferment, deflating at 5 hours, then at 9 hours.
- Shape douhg as per video, bake and enjoy.
