Butter & Onion Marinara

Very simple sauce that yields great flavor and taste.

Ingredients

  • 28-ounce can Italian plum tomatoes
  • 1/4 teaspoon red pepper flakes
  • 2 teaspoon kosher salt
  • 1 tablespoon onion powder
  • 1/2 stick salted butter
  • 3/4 pound of macaroni or other pasta
  • 2 thick pats of butter (approx. 2 tablespoons)
  • Pinch of salt
  • 1 tablespoon chives (fresh and minced, or freeze-dried)

Instructions

  1. Begin boiling pasta as per instructions on package.
  2. Pour undrained tomatoes into pot with all seasonings. Place over medium-high heat, add butter, and stir while bringing to a simmer. Turn heat to low and allow to simmer for another 10-15 minutes.
  3. Turn off heat. Once cooled, puree slightly with immersion blender to break up large tomato chunks.
  4. When pasta is cooked and strained, mix in butter, a pinch of salt, and chives.
  5. Ladle sauce over pasta to serve. Garnish with parmesan cheese.
