Spaghetti Carbonara

Spaghetti Carbonara

Simple dish that is a classic in Italy made with food storage.

Ingredients

  • 3 garlic cloves, sliced
  • 1 pound spaghetti noodles
  • 1/2 cup parmesan cheese
  • 3 large eggs + 1 egg yolk
  • 3 tablespoon extra virgin olive oil
  • 3 ounces pancetta or thick cut bacon, diced
  • 1/2 teaspoons black pepper, divided
  • Two ladlefuls of reserved pasta water

Instructions

  1. Slice garlic.
  2. In uncovered pot of boiling water, cook noodles, stirring occasionally until just al dente.
  3. Break eggs into measuring cup. Whisk in 3/4 of the total parmesan cheese. Season lightly with salt & pepper.
  4. Five minutes into cooking noodles, heat oil in frying pan over medium high heat. Add garlic and cook for 1-2 minutes. Season with more black pepper
  5. Add pancetta and cook for 3-4 minutes. Turn off heat and add half of noodles and two ladlefuls pasta water. Pour egg mixture into pan and toss well.
  6. Garnish with remaining black pepper and parmesan cheese.
