Spaghetti Carbonara
Spaghetti Carbonara
Simple dish that is a classic in Italy made with food storage.
Ingredients
- 3 garlic cloves, sliced
- 1 pound spaghetti noodles
- 1/2 cup parmesan cheese
- 3 large eggs + 1 egg yolk
- 3 tablespoon extra virgin olive oil
- 3 ounces pancetta or thick cut bacon, diced
- 1/2 teaspoons black pepper, divided
- Two ladlefuls of reserved pasta water
Instructions
- Slice garlic.
- In uncovered pot of boiling water, cook noodles, stirring occasionally until just al dente.
- Break eggs into measuring cup. Whisk in 3/4 of the total parmesan cheese. Season lightly with salt & pepper.
- Five minutes into cooking noodles, heat oil in frying pan over medium high heat. Add garlic and cook for 1-2 minutes. Season with more black pepper
- Add pancetta and cook for 3-4 minutes. Turn off heat and add half of noodles and two ladlefuls pasta water. Pour egg mixture into pan and toss well.
- Garnish with remaining black pepper and parmesan cheese.
