Fettuccine Radicchio
Super tasty recipe using bitter greens from your garden to simple pasta from your pantry and enjoy a tasty feast!
Ingredients
- 3 cups sliced radicchio or cabbage
- 2 strips bacon
- 1 teaspoon garlic powder
- 1 cup green onions (fresh and diced, or freeze-dried)
- Salt and pepper
- 1 cup evaporated milk
- 3 tablespoons Parmesan cheese, grated or crumbled
- 1/2 pound fettuccini or other pasta
- 1 egg, beaten (or powdered equivalent — I use Ova-Easy Whole Egg Crystals)
- Parmesan cheese to garnish
Instructions
- Slice radicchio. Fry bacon in pot until crisp, then add garlic powder, green onions, and radicchio.
- Season with salt and pepper, and cook over medium heat for 5 minutes, tossing frequently, until radicchio is slightly wilted.
- Add evaporated milk and cheese and stir in.
- Cook noodles in salted boiling water till al dente. Drain and add to pot with radicchio mixture. Add egg and toss well.
- Serve family style and garnish with additional parmesan cheese.
