Fettuccine Radicchio

Super tasty recipe using bitter greens from your garden to simple pasta from your pantry and enjoy a tasty feast!

Ingredients

  • 3 cups sliced radicchio or cabbage
  • 2 strips bacon
  • 1 teaspoon garlic powder
  • 1 cup green onions (fresh and diced, or freeze-dried)
  • Salt and pepper
  • 1 cup evaporated milk
  • 3 tablespoons Parmesan cheese, grated or crumbled
  • 1/2 pound fettuccini or other pasta
  • 1 egg, beaten (or powdered equivalent — I use Ova-Easy Whole Egg Crystals)
  • Parmesan cheese to garnish

Instructions

  1. Slice radicchio. Fry bacon in pot until crisp, then add garlic powder, green onions, and radicchio.
  2. Season with salt and pepper, and cook over medium heat for 5 minutes, tossing frequently, until radicchio is slightly wilted.
  3. Add evaporated milk and cheese and stir in.
  4. Cook noodles in salted boiling water till al dente. Drain and add to pot with radicchio mixture. Add egg and toss well.
  5. Serve family style and garnish with additional parmesan cheese.
